Lady Cream Peas Recipe
6+ servings

1 lb Camellia lady cream peas (overnight soaking optional) http://bit.ly/LadyCreamPeas
6 cups water or sodium-free vegetable broth
3 cloves of garlic, minced
1/2 red or yellow onion, diced
1 bay leaf
1 teaspoon fennel seeds
1 teaspoon dried thyme
1 teaspoon white pepper, optional (or use black)
1 tablespoon grapeseed oil
4 vegan sausages, diced (Field Roast is really good, or use my recipe: http://bit.ly/VeganSausageRecipe)
2 teaspoons sea salt, plus more to taste
1-2 teaspoons red chili flakes
1/4 cup fresh parsley, chopped

Bring the lady cream peas and water to a boil in a large pot.
When it starts to boil, reduce the heat to medium to simmer. Remove any foam that collects on top of the beans.
Add the garlic, onions, bay leaf, fennel seeds, dried thyme, and pepper. Stir well, then place a lid on the pot, keeping it ajar.
Simmer the beans on medium-low heat for about 45 minutes, or until they are tender.
Warm the oil in a separate pan, and pan fry the vegan sausage on both sides.
Add the vegan sausage to the beans, along with red chili flakes. Stir.
Season to taste with more salt and pepper.
Serve over rice and topped with fresh parsley.

Cold Brew Cacao Smoothie
makes 2

2 frozen peeled bananas
1 1/2 cup soy milk (or other non-dairy milk) milk
3-4 tablespoons raw cacao powder, or cocoa powder
1 tablespoon maple syrup or 2 dates
2 servings New Orleans Cool Brew coffee http://www.coolbrew.com/ (or 2 servings other cold brew concentrate)
1/2 teaspoon cinnamon (optional)

Place ingredients into a blender, and blend until creamy.
Serve immediately.
